Strawberry Tiramisù

The Summer version of Tiramisù with fresh strawberries, Savoiardi biscuits, and ViaVio's Mascarpone!


For the Cream

  • 400g ViaVio Mascarpone

  • 6 Eggs yolks

  • 100g Sugar

For the Strawberry juice

  • 300g Strawberries

  • 20g Lemon juice

  • 20g Sugar

  • 100ml Water

For the topping

  • 300g Savoiardi biscuits

  • 200g Strawberries

  • 5 Mint leaves


  1. Clean and chop 300g of strawberries in small pieces, sprinkle with 20 g of sugar and set aside.

  2. In a bowl whip yolks and sugar until thick and creamy. Beat in the ViaVio Mascarpone and set aside.

  3. Place the set aside strawberries, lemon juice and water in a blender, blend until smooth and pour into a bowl.

  4. Slice the remaining 200g strawberries thinly.

  5. Dip the Savoiardi biscuits in the strawberry juice. Turning to coat all the biscuits with juice, without submerging them too much.

  6. In a serving dish alternate a layer of Mascarpone cream, a layer of dipped Savoiardi biscuits and a layer of fresh sliced strawberries. Repeat and finish with a layer of fresh sliced strawberries.

  7. Cover and chill for at least 8 hours, Serve with a few fresh mint leaves!
