Mozzarella
​A stretched curd cheese, mozzarella takes its name from the Italian word mozzare, meaning “to cut by hand.” Crafted using techniques passed down through generations, the skill, intuition, and passion of the cheesemaker are essential in creating a truly exceptional product.

​Simple in ingredients yet complex in character, mozzarella reflects the perfect balance between premium milk and artisan expertise—making it one of the true cornerstones of Italian cuisine.

Bocconcini
​Made using the same traditional process as mozzarella, bocconcini are simply smaller, bite-sized portions of this classic stretched curd cheese.​

​Their delicate texture and fresh, milky flavour make them ideal for salads, antipasti, and light dishes, delivering all the character of traditional mozzarella in a versatile bite-sized form.


Stracciatella

Stracciatella is a stringy mixture of cream, mozzarella, and salt, hand-stretched into soft, stringy strands with a rich, creamy flavour. It is the creamy heart of burrata, but also stands beautifully on its own.

Highly versatile in the kitchen, it’s perfect for adding a spoonful to soups, roasted vegetables, pasta, or warm dishes just before serving. It melts slightly on contact, adding instant freshness, creaminess, and depth of flavour.
Burrata​


Burrata is a soft mozzarella pouch filled with stracciatella a delicate blend of cream, mozzarella, and salt with a smooth, creamy texture.
Each Burrata is carefully hand-filled at ViaVio. When cut open, the centre gently spills out for a fresh, deliciously soft experience.

Best enjoyed at room temperature, burrata is fresh, rich, and versatile perfect simply with olive oil and salt, or added to salads, antipasti, and warm dishes.

Stracchino
Stracchino is a traditional cheese from northern Italy, known for its soft, creamy texture and delicate flavour. With no rind, it has a mild, slightly tangy taste somewhere between cheese and yoghurt.

Our ViaVio Stracchino comes in a block that can be sliced or easily spread. It’s perfect on fresh bread or crackers, and works beautifully in salads, especially with rocket and smoked salmon. It can also be used in cooking, such as creamy cheesecakes or for finishing a mantecato risotto.
