Mozzarella & Bocconcini
A stretched curd cheese, the name mozzarella comes from the verb “mozzare”, meaning “to cut by hand”. Made using techniques passed down through generations, the knowledge, passion and feel of a cheese master is vital in producing a high quality end product.
Mozzarella is both simple and complex. The synergy between high quality ingredients and the expertise of the cheesemaker makes it one of the cornerstones
of Italian cuisine.
ViaVio also makes Bocconcini. This is the same
cheese as mozzarella but is a smaller
size (about 20 grams).
Burrata is mozzarella skin filled with Stracciatella - a handmade stringy mixture of creamy mozzarella strands.
Burrata is a very special rich fresh cheese that is best served at room temperature and eaten within 10 days of making.
Stracciatella - a stringy mixture of cream, mozzarella and salt- on its own is also very versatile in cooking – just add a spoon of it on top of soups or in vegetable dishes.
A very popular cheese from the northern
part of Italy, stracchino has no rind, embodies
a soft and creamy texture and a mild delicate
flavour. The taste is a little sour, being between cheese and yogurt.
ViaVio stracchino is made in a block which can be sliced or spread. It is ideal on crackers and breads, or with a rocket and smoked salmon salad.
