Smoked Salmon & Stracciatella Bowties

Did you know STRACCIATELLA means “little Rag” in Italian, hence the finely shredded mozzarella look?!



INGREDIENTS:

Serves 4

  • 400 g Bowties or your choice of pasta

  • 250 g Smoked Salmon

  • 1 Small onion

  • 1 Zucchini (if in season 😉)

  • 200g ViaVio Stracciatella


STEPS:

Risotto with musrhoom and Stracchino cheese Viavio
  1. Boil 1.5L of salted water. Once boiling, drop the Bowties and cook for approx. 10 minutes to al dente.

  2. Meanwhile in a large pan, fry the sliced onion and the grated zucchini with a teaspoon of butter. Once golden, add the salmon, black pepper and salt to taste. Stir for about 30 seconds then take off the stove. This way the salmon will keep cooking with the heat but won't get dry.

  3. Drain the pasta and poor in the salmon pan, stir well and add 2/3 of the ViaVio Stracciatella.



Stir and serve with an extra spoon of ViaVio Stracciatella on the plate!
