Mozzarella & Sundried Tomatoes loaf

A tasty alternative to bread, rich in flavour - easy to make Gluten Free!

  • 3 eggs

  • 300 g flour or gluten free flour

  • 200 g Sundried tomatoes

  • 10 black olives

  • 100 ml milk

  • 6 basil leaves

  • 200 g ViaVio Mozzarella

  • 1 sachet of instant yeast for savory pies

  • 20 g ViaVio NoZtrano cheese or Parmesan cheese

  • 1 tablespoon of activated yeast

  • salt & pepper

  • Kakariki extra virgin olive oil

  1. Preheat oven to 180 C fan bake.

  2. In a bowl, beat eggs with milk, add the sifted flour with activated yeast, and whisk gently.

  3. Add the diced ViaVio Mozzarella and the grated ViaVio NoZtrano cheese, mix well and then add sundried tomatoes, black olives, basil leaves, salt and pepper and give a final mix.

  4. Transfer your ingredients into a loaf pan, oiled with extra virgin olive oil, and bake for about 45 minutes.

  5. Test your loaf with a fork, if the fork comes out dry, turn off the oven and let cool down, remove from the mold.
