Try the ViaVio Version of the famous Italian Caprese Chocolate Cake. This Italian Cake from the Capri Island was created by mistake by Chef Carmine di Fiore around 1920, who accidentally forgot to add flour in the mix.
As they say, every cloud has a silver lining and this delicious soft chocolaty cake became the icon of traditional pastry-making in Campania!
INGREDIENTS:
350g ViaVio Mascarpone
150g Almond Flour
200g sugar
4 Eggs
1tbs baking powder
50g Cocoa powder
25/50 ml milk
STEPS:
Beat the eggs with the sugar with a whisk until you get a foamy mixture
Add the mascarpone and whisk well, then add the cocoa powder stir gently and then start pouring in the almond flour with the baking powder.
Add milk till you get a creamy mixture.
Pour in your greased baking tin.
Bake at 180° in a preheated oven for about 45 minutes.
