Creamy Mascarpone and Smoked Salmon Tagliatelle

This delicate pasta sauce makes a fantastic first course. It can be prepared in no time while the pasta cooks!


  • 250-300g Fresh Tagliatelle

  • 200g ViaVio Mascarpone

  • 30g Butter

  • 150g Smoked Salmon

  • 20g Grated ViaVio NoZtrano Cheese

  • Pinch of salt, Parsley & Basil


1. Fill a large pan with water and add a pinch of salt. Cover and bring to the boil.

5. Once the water in the pan is boiling, add the Tagliatelle pasta and cook for 7 to 8 min until al dente stirring occasionally.

4. In the meantime, in a large frying pan melt the butter and gently stir in the smoked salmon. Add the mascarpone, pinch of salt and pepper and a spoon of the reserved pasta water to get a creamier texture.

5. Drain the Tagliatelle pasta when ready and stir into your Mascarpone and smoked salmon sauce.

Sprinkle with chopped parsley and basil and dust with the grated NoZtrano.

Pasta is ready, Buon appetito!
